For example:

  • Sautéing: You cook vegetables or meat in a pan over high heat to quickly brown them and preserve their flavor.
  • Stir-frying: This is another example of cooking over high heat, commonly used in Asian cuisine, where ingredients are cooked rapidly in a wok.

So, cooking “over higher heat” means using a hotter temperature to cook the food more quickly and achieve a specific texture or flavor.
